Cabbage rolls are a western Canadian classic. We’ve made it a couple steps easier and more meal prep friendly for you!

ingredients

1 lb Extra Lean Ground Turkey
6 cups Green Cabbage (sliced)
1/4 cup Tomato Paste
1 Small Yellow Onion (chopped)
1 1/2 cups Basmati Rice (cooked)
1/2 cup Chicken Broth, Low Sodium
2 tbsps Extra Virgin Olive Oil

directions

  1. Wash produce, dice onion and slice cabbage.

  2. Add olive oil and tomato paste to pot then add diced onion and season with salt and pepper - cook until fragrant.

  3. Add ground turkey to pot and cook until cooked through.

  4. Add starch resistant rice *see notes* or cook fresh rice as directed on package.

  5. Add sliced cabbage and season with S&P

  6. Add chicken broth and mix to combine. Place lid on and cook for 5 minutes or until rice is warm and cabbage is cooked.

  7. Enjoy!

notes

How to turn white rice into a resistant starch?
You can cook white rice with coconut oil, then immediately store it in the fridge to allow it to cool and reheat as needed. This decreases the glycemic index and increases the levels of resistant starch – a prebiotic.

Tip:
Cook rice a day before and use with this recipe for starch resistant rice
