ingredients

3 ozs Chickpea Pasta
3 1/2 ozs Chicken Thighs
1/2 cup Romaine Hearts
1/2 cup Baby Kale
1/4 Cucumber
1/2 cup Green Lettuce
1 tbsp Cilantro
1 tbsp Parsley
1 stalk Green Onion
to taste lemon juice
1 tsp Sea Salt & Black Pepper
1/2 Avocado
2 Garlic (cloves)
1 tbsp Fresh Dill
3 tbsps Extra Virgin Olive Oil

directions

  1. Cook chickpea pasta as package directs. Once cooked, drain and set aside.

  2. Wash and dry all produce. Chop lettuce, baby kale, green onion and cucumber and set aside.

  3. Season chicken thighs with salt and pepper and cook through until safe internal temperature is reached. (Air fry or pan fry, your preference!)

  4. Add avocado, garlic, cilantro, parsley, dill, lemon juice, olive oil, and salt and pepper to food processor and blend until smooth. Add a splash of water if too thick.

  5. Assemble pasta, chopped lettuce, green onion, and cucumber in a bowl, top with dressing and chicken thigh and enjoy!
